Where to Eat in Galveston- Darlene’s Shrimp Shack

If you are driving down 61st street along Offats Bayou, you will see Darlene’s Shrimp Shack (a food truck) sitting pretty next to Aunt Margie’s Bait Shop and a shrimp boat named Darlene.  If you are thinking that a shrimp shack next to a bait shop with shrimping boats means that the shrimp in that shrimp shack is fresh- you would be correct!

The shrimp is fresh and locally caught (when possible) and battered as it is ordered.  You can get your shrimp battered or “naked” and choose from twelve different seasoning options.  The baskets come with 10 shrimp and 2 hushpuppies for about $12.00.  The shrimp are huge so reasonably you could share but I am not reasonable when it comes to sharing my food.

These shrimp are contenders for best shrimp on the island.  I have eaten there multiple times and have loved each and every bite.  Everyone in my office loves this place. The batter is on the light side, so you really taste the shrimp.  My favorite flavors are Cajun or Garlic Parmesan.  Other flavor options are lemon pepper, buffalo, plain, and more.

If the weather is pretty you can sit out at the picnic tables and watch the sail boats on the Bayou or watch the sea birds come and go.

From the family history I have picked up from talking with the folks who run the bait shop, Margie and Darlene were sisters.  Margie was the aunt who kept most of the kids when they were little.  When she passed, the family decided to name the bait camp after her.  Aunt Margie’s bait camp is a popular spot for bait AND they sell “eating” shrimp in there as well.  We have been buying shrimp, squid, flounder and more in there for years.  If the seafood is fresh, you don’t have to be a great cook to make great seafood.

Aunt Margie’s bait camp and Darlene’s Shrimp Shack are BOI (born on the island) and as local as you can get.  Give them a try, you will be glad you did!

Is There Any Good Thing Left? Absolutely!

Words are swirling around us and have been for months. Most of these words are predictions of death, despair, desolation. There is a reason for this- a fearful person is easy to manipulate.

All this talk may make you think that there is nothing good left in this world, nothing good left to look forward, and nothing good to celebrate.

This is not the truth.

Here is the truth:

Whoever seeks good finds favor,

but evil comes to one who searches for it.

Proverbs 11:27

Yes, there is evil in the world, and death, and destruction but there ALWAYS has been. There are NO good old days, evil walked the earth in 1950, 1850, 850 and even 210 B.C. Evil has been lurking on the earth since God hurled Satan out of heaven and he landed here.

BUT, and it is a BIG BUT- Jesus also came to the earth, righted the wrongs of the first man, Adam, and restored us to right fellowship with God. The Holy Spirit walks with us, fills us, and speaks to us.

There is good, plenty of it, all around us but we have to look for it. When you find the good, SHARE it. Fill your social media feed with the good in the world, your city, your life. Fill your mouth with good reports of what is happening in your life. Find the good and spread it around like sprinkles on a doughnut.

Regardless of what is going on in D.C. or Austin, Texas, my life is bought and paid for by the blood of Jesus Christ and EVERY promise made in the Bible is MINE because of Jesus. There is nothing a man or woman can do to change that fact.

So, take heart to day. You are not hopeless you have the power to live a good life, you just have to look for it and put your HOPE in Jesus Christ.

Hope and Encouragement for Today

But blessed is the man who

trust in the Lord

whose confidence is in him.

He will be like a tree planted

by the water

that sends out its roots by the steam.

It does not fear when heat comes;

its leaves are always green.

It has no worries in a year of drought

and never fails to bear fruit.

Jeremiah 17-7-8

I can’t recommend Jesus enough.

When the news reels play or the social media feeds fill up with doom, despair, disrespect and every other negative thing- I wield this scripture like a sword to slay the anxiety and fear that threatens to over take me. This promise and every other promise in the Bible are without condition. It does not say in Jerimiah that if the Republicans are in power that I will be like a tree planted by the water. It doesn’t even specify which country I should live in to experience the promises of God. The only requirement is that I trust in the Lord.

Trust in the Lord= I do not need to fear difficult times.

I will take that deal. Notice that this scriptures does not say that drought never came to this tree. It says the tree has no worries in a drought. Not only does it not worry, but it never misses a year of production. Friend, this is a no brainer.

The world can keep their fear and fighting, hating and destruction- I will go with God. Regardless of what comes in this world, I will be like a tree planted by the water. God is my hope, my trust is in HIM. He has proven himself to me time and again.

Make no mistake, we are in a world at war. This war is between good and evil. It rages everyday. Battles can be bloody and I may take a hit, but my hope is in the Lord, I trust in the Lord to bring his promises to bear. So, turn off the television and internet feed and turn to the One who is able to save your soul and drench you with so much love that it drives out all fear.

Jesus Christ came and died for you and for me. He restored us to a perfect relationship with God. He didn’t come to steal all your fun and wrap you in chains of shame and guild. Jesus came to give you life. The only thing that Jesus want to take from you is fear and death. Give your life to Christ, you will be glad you did!

Where To Eat In Galveston- The Gypsy Joynt

If you like off-beat and funky, Galveston is the place for you.  If you love good food served with a funky vibe, the Gypsy Joynt is the place for you. It’s not surprising to learn that the Gypsy Joynt got its start in Austin.  It’s still one of the best-kept secrets in Galveston. 

Located off the Strand in downtown Galveston, this jewel is tucked away a little further down Market Street than most people go.  And this is okay with us locals because we like not having to wait for hours to get our food!


The great folks are run a wonderful restaurant and really give back to the people of Galveston.  They also source their seafood locally which is very cool.


Speaking of seafood, my favorite dish is the Oscar Ocean. This sandwich has a homemade bun, pesto, balsamic vinegar dressing, veggies, and grilled fish.  the menu consists of a mix of traditional foods like chicken strips and mac and cheese along with crazy combinations of seafood and veggies.  The pizzas are the things dreams are made of- if you dream about food, which I do.  The deserts are AMAZING!

One Full Week- A Marine for Christmas

So, it has been one full week since I released A Marine For Christmas, and I have been amazed!

Thank you for all of your support! I am grateful for everyone who bought the book or downloaded it in Kindle Unlimited. I am also grateful for everyone who gave it a rating or left a review.

It made the decision to self-publish the rest of my books easy. I had fun, I am still learning a LOT, and I am excited. The thing that is probably the most appealing is the freedom to write what I want, how I want to and then control when it is available. For those that know me, this is not a surprise!

Gratin Dauphinois- The Best Potatoes!

Food is essential to romance. Regardless of where the food comes from- a fancy restaurant, a cool dinner, or from home. The old saying “the way to a man’s heart is through his stomach” has a lot of truth to it. I don’t know many women who are impervious to a man who cooks for her- or at least brings her tacos.

In A Marine for Christmas, Lucas is no different. Dixie blows his mind with Gratin Dauphinois and Beef Carbonnade. What good love story doesn’t have good food? I love cooking, I love growing food, and I love serving that food to those I love. So, my characters do as well. I hope you enjoy the recipe I have included for you!

You could call these scalloped potatoes, but Gratin Dauphinois has so much more flair!  It is hard to go wrong with potatoes, they are a humble food from the earth that need only a little dressing up.  You will be hard pressed to find a menu that can’t be complimented with a potato dish.  With the potatoes cooked in the oven with milk/cream, butter and a little garlic, the simplicity is deceptive.  This taste is subtle but engaging, the texture is smooth, and the experience is wonderful.

This dish complimented the Beef Carbonnade the family greatly enjoyed at our Christmas Dinner.  There was not a bit left after dinner, always a compliment to the cook!  Unless of course there is none left because the cook did a poor job of planning for her guests, but that was not the case- this time.

The humble potato!

Gratin Dauphinois

3 pounds of boiling potatoes– peeled and sliced 1/4 inch thick (the food processor works great for this)

1 cup of whole milk – I like to mix 3/4 cup whole milk with 1/4 cup cream- adds to the richness and wonderful texture.

1 clove garlic– pressed and spread on bottom of a buttered flame proof baking dish- I prefer a deep dish 9 inch cast iron skillet

3 tablespoons of butter plus more for greasing the bottom of the dish.

Once you have buttered the cast iron skillet and spread the pressed garlic, place the potatoes in the skillet spreading in layers.

Season the milk with salt and pepper, pour over potatoes.  Add more cream until the milk is 3/4 of the way up.  Place on burner and heat just to a simmer- this is a very important step so that the liquid and potatoes come together in the oven.

Distribute 3 tablespoons of butter (real butter, not margarine) on top of potatoes.

Bake in a 425′ oven for about 25 minutes- until the liquid is absorbed and the potatoes are tender.

Serve and be happy!  That is some flat out good food!  Great food does not have to be complicated to be wonderful.

The Power Is Yours

Thank God! My healing, your healing is not in anyway dependent upon the one who did the wounding!

Think about that a minute.

Your healing is not in anyway dependent upon the one who did the wounding.

This is so great because I have no control over the other person. Neither do you. Neither does God. Nope, not even God has control over people. He is a crazy risk taker and gave us this thing called free will. I have the freedom to do whatever I want, consequences be damned. This means other people can do whatever they want, regardless of the consequences to those around them. Now, don’t confuse God’s gift of free will as a blanket approval for every action- because He doesn’t like what was done to us anymore than we do.

Now, God does have control over my life because I freely choose to give him control.

AND THAT IS THE POINT

Because I have free will, when I chose God it is because I CHOSE God. This makes God over the moon happy because if a choice is forced, its not really choice. Love that is demanded and required is not LOVE. God so loved me that he gave his son. God so loved you that he gave his son. So, when I choose God, it means something. It sounds a lot like a love story, does it not?

My friend, it is the greatest love story ever told.

Since I have chosen God and his son Jesus, I have given them access to my heart, soul, and mind. I have surrendered my life, therefore he refuses to let me remain the same. He will pursue me, until I drop the barriers and let him see where it hurts. Not so he can add to the wound but so He can heal it. Kind of like the Alpha male in those love stories where he pursues the heart of the woman he loves, regardless of the venom she throughs his way? Yeah, just like that. God is the ultimate Alpha male and thanks be to Him, he has pursued my heart. This usually means that he keeps poking at the tender spot, not because He is sadistic but because He needs me to grant him permission to get in the middle of it.

As of late, any statement or question from Tony that could in any shape or form be construed as him saying that my best wasn’t good enough has brought out a huge reaction. Think angry mountain lion hissing, growling and baring her teeth- maybe even taking a swipe with the claws. He and God both just take all the anger and let it roll off. Neither walk away and for that I am so grateful. Nothing Tony has said was meant to imply that I wasn’t enough, for whatever reason he thinks I am freaking amazing.

No matter what I do, how hard I work, how much I accomplish- it’s NEVER enough. How hopless is that situation? Can you relate?

But, its not really a situation. It’s a mindset.

A mindset framed and built by words and messages from my past and fed by the enemy. Yes, we have an enemy whose whole purpose is to steal, kill and destroy. We have an enemy but we have a bigger God. The commander of Angel Armies has come to our rescue. Once again, I get love story vibes. God is writing the love story of your life. DO NOT give in to the enemy.

Seeing the truth of the situation, seeing the lie that is being told, this is the beginning of healing. The healing is not dependent upon the one who did the wounding. The healing is dependent on you- YOU have to power.

Hear that again- YOU have ALL the POWER over your healing.

That doesn’t mean you have all the answers. You don’t. BUT, your heavenly father does. Give Him control over your life and let him into the wounded areas and HE WILL heal you. You have the power to choose life and recieve the healing.

Now, please do not expect this to be an easy process. It won’t be. Healing is scary. But living with wounds unhealed is even more scary.

For me, I could not stand the idea that the enemy would have any power or control over my future. This meant the wounds had to be healed or they would steal joy and peace from my present and my future. I will NOT give the enemy one more victory in my life.

I have wounds because others did not let God heal their wounds. I am NOT riding that merry-go-round another minute. I will not hurt others by refusing to let God heal my wounds.

Hallelujah!

My Leading Man

Every writer has to have an inspiration, a muse, or archetype from which they draw. Because I am an incurable romantic, I write romance. In real life, I WANT everyone to get that happily ever after.

When it comes to the leading man in a story- regardless of the genre- I am only drawn to an Alpha male. I have absolutely no use for anything less. Power is a tricky thing, but one thing that it always is is attractive. I truly believe that is the appeal of a uniform, it represents power and strength.

Now, here is where we get into arguments. So many assume that an Alpha male is a bully, a brute, or abusive. Many book reviews I have read stated that they did not like the male lead characters because they were Alphas and Alphas were toxic. Here is where they are wrong. A true Alpha is a leader, a protector, a warrior, and a good guy. I wouldn’t follow anything less and I wouldn’t trust my future to anything less. This also means, that I wouldn’t write anything less.

Those men that are bullies, brutes, and abusive are actually weak men who act out loudly. They don’t have what it takes to lead and let others around them succeed so they beat them down either emotionally, physically, mentally or all of these above. This is not strength. A fearful man is just as dangerous. A man who shrinks back in fear cannot be trusted to protect or fight for what is important.

I have had the pleasure of being married to an Alpha male for nearly 30 years. When we met, I had a lot of unhealed wounds. He was the safe place for me to heal. He loved me as I was, took my anger (even when he wasn’t the reason I was angry), let me be myself without criticizing who I was. He even took the physical punches I threw, but not for long because he wouldn’t tolerate abusive behaviors. He never raised a hand to me but he scared me good and I never hit him again. That is what an Alpha looks like.

I have also raised an Alpha male. I have seen how the heart of a warrior develops by watching it emerge early on and seeing what it looks like through each stage. My son has a very different personality from my husband, but their hearts are the same.

There is a misconception that Alpha males don’t feel deeply or get attached. This is so wrong. They do feel deeply. They are loyal. They are driven. They love deeply, so deeply that they would sacrifice their own safety or life in order to protect what is theirs and who they love. I have watched Tony do whatever was necessary to ensure that our children had what they needed and I have never had to wonder if I was loved.

Because of their strength of character, they aren’t afraid to get physical. Both my husband and my son will settle an argument with their fists- if it’s needed. However, it is rarely needed. I feel safe knowing that if anything went down, my husband will take care of me. Honestly, I could be as wrong and wrong could be and Tony would defend me. We might have a serious talk when we got home, but he will have my back no matter what.

So, it is easy to see where I get my inspiration for the leading men I write. In each and every one of them, there is a piece of Tony Ross. The characters have different personalities, but that warrior heart is the same. My characters talk a lot more than my husband, so much of what he says is in what he doesn’t say.

He also isn’t very reactive. This is a good thing because I am VERY reactive. But in a good story, people need to react. So, I write scenes that would cause Tony to react. This means that the love interests gets physically attacked or threatened, and/or quite often shot at- but nobody dies because in my world everyone gets the happily ever after.

Everyman needs a battle to fight and beauty to rescue- these are the men I write. I simply write him again and again and thank God that every night I sleep next to Tony Ross.

Don’t let that easy going smile and quiet personality fool you, mess with me or one of his children and he will rain down hell.
